Beer or meat

I have just eaten the most delicious belly pork from Two Cocks Brewery. The title of this farm rather hides the fact that it also produces meat, currently pork and lamb with Dexter beef to come (if they can ever bear to share it). I have eaten the lamb and the pork and can tell you that it is indeed delicious. I put the belly of pork in the oven on low last night with cider, seasoning including one star anise, onions, carrots and other odd bits of veg I found, covered the pan with tin foil and left it all night. This morning I uncovered the pan, whacked the heat up and ended up with the most delicious, meltingly tender pork belly with fantastic crispy crackling. Such a treat. The gravy was also delicious, rich with the 18 hour cooked meat juices
