Kate from Blackberry Cottage recently visited West Berkshire Mencap bringing delicious supplies of cakes and traybakes which all had one thing in common, they all had vegetables in them. This venture started about ten years ago when a mum turned up at Kate’s home in tears because she was unable to get her child to eat any vegetables. This obviously struck a chord with Kate who started to experiment with cakes and veg. Whilst I have heard, and quite like, carrot cake, this is kindergarten compared to what Kate produces. Kate made some chocolate brownies with spinach which were gobbled up by the little girl involved. Yes they do count as one of your five a day and are lower in fat than the traditional recipes.

I had to think hard about whether to post this because as you know I only post about good food and I was a little wary about the whole veggy cake thing but I tasted them and they were delicious. I am hoping to get a selection box on my desk as I have hinted to my staff. Plus she came to Bubble Club, our group for under 5’s that we hold every Wednesday morning which is held in particular for those parents who have just found out that their children have been diagnosed with a disability, a very traumatic time but certainly eased that day by tasty cake.
