Ok – a short post about the total satisfaction of the perfect bacon sandwich. First, and I mean this emphatically, get your bacon from Two Cocks Farm/Brewery. This is seriously the best bacon I have eaten and I am seriously worried that I am about to run out (Phil please send me more smoked streaky asap). These are piggies fed on hops and love and you can taste it. Even better they come with the rind on! Do you like crackling? Do you breathe? Who doesn’t like crackling? Actually if you don’t you are welcome to Sunday lunch here any time as it means more for us, in fact maybe I should quiz my chicks on their potential partners, not just if they have ripe eggs (what do you mean you don’t do that!) but also do they like crackling. I need an affirmative and a negative response. Sorted.   Anyway if you look at this pic below you will see the rind carefully separated and the bacon chopped into smaller bits to make the eating so much easier and less gruesome for anyone to watch. Also I can take all the rind if my husband doesn’t realise it has a rind which is perfect for me (come on you would do the same).  Sometimes I add a free range egg and love the moment when I bite into the yolk, oh yeah.
Addendum – how could I have forgotten to write this? When you cook Two Cocks bacon you end up with a pan with real lard in, none of that pathetic white water spitting out, this is real bacon that oozes real lard. this could not be better. Oh and they do amazing sausages as well.

A picture of me with real rabbit earrings, how cool is that. Now I am about to tell you something that may astound you. I am actually Empress of the Rabbits. I live near Greenham Common and every time I drive past the rabbits come out and do a Mexican wave, I LOVE rabbits, I don’t eat them I adore them and they worship me. So to have some baby rabbits at West Berkshire Mencap for the morning was brilliant, see the look of delight on my face. And theirs.
 As for Two Cocks, they have offered me the chance to follow their Dexter cow to the butchers to watch the whole process and I am really excited about it, not least because I get first dibs at the best bits of beef that I want (GET BACK ALL OF YOU) like short ribs etc. I will be reporting on this when it happens.
